This potato stew recipe is as easy as it is comforting. As traditional as it is simple and to which you can add other ingredients at will: chorizo, ribs, stewed beef, turkey, hake, cod, any other fish… Although the best thing is to make some widow potatoes: without any meat since the recipe claims the potato as the protagonist of this dish. In a pot, we put 2 cloves of garlic crushed and jacketed and brown over low heat. Remove the garlic and add the chopped onion and carrot. Let it poach for 5 minutes and add the leek and the peppers, also chopped.

It is perfect as a first course or as a single dish, although you can add a simple appetizer, an easy salad or a quick and easy dessert to top off the menu effortlessly in just over an hour.
