In this boletus, pumpkin and shrimp risotto, the flavors of the coral heads and those of the boletus are intense. In addition, they combine wonderfully with the creaminess provided by the pumpkin. The result is a powerful risotto, full of chunks and of which you want to repeat because it’s delicious. A great recipe for any time of the year.
To make this risotto, we start by cutting both the pumpkin and the boletus into small pieces of approximately half a centimeter. Chop the spring onion very finely and poach it until transparent. Peel the prawns and add the heads to the casserole, reserving the bodies. In the casserole, add a splash of vermouth and crush the heads of the prawns with the spoon so that their corals come out.
We then remove the heads and transfer them to a saucepan with their peels, a carrot and half a leek to make a quick broth with which we will water the rice of our risotto later. If we have remains of any homemade vegetable or fish broth in the fridge, we also add it to that saucepan so that the broth has more flavor.
Meanwhile, in the saucepan with the chives and corals, add the pieces of pumpkin and mushrooms and poach them for five minutes. Then add the rice and stir it over high heat until it changes to a mother-of-pearl color. Add another splash of vermouth and stir until it evaporates. Next, Add the hot broth to the rice using a serving spoonstirring continuously and without adding more broth until the liquid has been absorbed by the risotto.
We repeat the operation until the rice is tender but a little al dente, which will take us about 20 minutes. When the pumpkin begins to fall apart and stain the rice, add the shrimp meat and turn off the heat. To finish off the dish, we add a mixture of Parmesan and butter that will give a creamier touch to the rice when buttered and melted with it. We serve immediately so that the risotto is at its point.
