The milk meringue mousse cake is easier to prepare than you might imagine. Besides, the result is a guarantee of success. A very positive aspect is that you don’t even need an oven for its preparation. Of course, you have to prepare it the day before because it requires cold weather. The base is the classic biscuits and butter, the one of a lifetime, which is prepared quickly by crushing both ingredients at the same time. You can use cinnamon cookies, which go great with this dessert.
First of all, Crush the biscuits together with the butter. If we use a kitchen robot it will be easier, but if we do it by hand it is convenient that the butter is melted. Then, we line the bottom of a 20 cm removable mold with the mixture, squeezing so that it compacts. We reserve in the fridge.
We hydrate the gelatin in a bowl with a little milk. We put the rest in a small bowl. along with the cinnamon stick and the peel of half a lemon. Bring to a boil and immediately turn off the heat. Remove the cinnamon and lemon.
Next, we add the hydrated gelatin to the milk and stir with a whisk to integrate. Then, we also add the condensed milk, cover and let it cool down slightly.
Meanwhile, we beat the cream (very cold) with some rods. When it is semi-assembled, add the icing sugar and beat again until smooth. We reserve in the fridge.
We mount the whites with the help of some rods until they are firm. To do this, they must be at room temperature, so if you keep the eggs in the fridge, make sure you take them out at least an hour before. Then, we add the ground cinnamon and stir to integrate.
Mix the whipped egg whites with the milk mixture, carefully stirring with soft and enveloping movements so that they do not lose the air incorporated with the previous shake. Add this mixture to the whipped cream, mixing equally gently until homogeneous.
Fill the mold with the mousse and smooth the surface. Store in the freezer for about 12 hours so that it solidifies and can be easily demoulded as it is soft. Remove the contour of the mold and let it thaw in the fridge before consuming.
