The Roman courgette recipe is not only one of the easiest ways to cook this vegetable, it is also one of the most surprising. The best thing is that it is prepared in a jiffy and, in about five minutes, we have ready some crispy zucchini and full of flavor, ideal for serving at dinner. Although it is usually much more common to make breaded eggplant, this recipe has nothing to envy.

To prepare these courgettes alla romana, you need few ingredients and very basic: zucchini, salt, chilli flakes, dried thyme, ground cumin, ground onion, ground black pepper, breadcrumbs, flour, eggs, paprika, grated Parmesan cheese and light olive oil for frying.
How to make zucchini alla romana
The process is just as simple as the list of ingredients. First you have to wash and cut the zucchini and slice them with the help of a mandolin (or a knife).
Then, in a bowl, mix the spices and sprinkle the zucchini. In another plate, we beat a couple of eggs and add grated cheese. Coat each zucchini disk in a mixture, in equal parts, of flour and breadcrumbs. Then, in the egg.
They have to be well covered on all sides before frying them in a pan with plenty of hot oil, until they are golden brown and turning them over so that they are done equally on both sides.
