This Lotus Cookie and Cheesecake recipe is one of the most delicious you can make without the need for an oven. Although, in this case, we are going to make some individual cakes that are perfect for any celebration. Fresh, soft and not heavy at all, each spoonful is very much enjoyed, with its slightly crunchy base and with that characteristic caramel flavor of Lotus cookies, famous for being caramelized and made only from natural ingredients. A dessert with spectacular flavor and texture.
We start preparing the base and, for this, we crush the cookies and add the melted butter. We mix evenly. We prepare a square mold of 15 by 15 centimeters and flatten the dough with a spatula in the bottom of the mold. Then, we reserve in the fridge.
We put to hydrate the gelatin sheets with cold water and, meanwhile, a bowl we beat the cream cheese at room temperature. Add the Lotus spread cream and beat with an electric whisk until ingredients are mixed.
Add the vanilla extract, mix, add the lemon juice and stir. Then, add the drained and melted gelatin for a few seconds in the microwave.

On the other hand, we whip the cream together with the sugar until it is frothy
(it cannot be fully assembled) and add it to the previous mixture. Stir with a whisk and add the Lotus cookies crushed in a mortar. Yes indeed, there should be some bits left that will make the biscuit mousse crunchy.
Pour the mousse into the mold on the base, spread it well and smooth the surface with a spatula. We placed six Lotus cookies. We put five hours to gel in the fridge and one hour in the freezer.
To unmold, we put around the mold a warm cloth encircling it for a few minutes and we lift the mold upwards when we see that the mousse begins to come off the walls. We cut with a sharp knife six rectangular cakes.
