There are many butter cookie recipes but this is just the basic butter cookie recipe, the one that always comes out well and that we consider infallible. It is a delicious snack and very easy to prepare, perfect to keep the little ones in the house entertained for a good time. Of course, if we intend to decorate them, it is important to respect the cooling times before baking so that they do not deform. If this is not the case, we can shorten the recipe to 30 minutes.
First, with the help of electric rods, beat the butter together with the sugar. The butter has to be ointment, that is, soft texture or else it will be impossible to mix. Then add the vanilla essence and the egg. Continue beating until both ingredients are incorporated.
Lastly, add the flour little by little. We use the mixer until the dough allows us. When this has become very dense, we will need to transfer it to the work surface. Then knead well until homogeneous.
With the help of a roller, stretch the dough on a sheet of parchment or oven paper, ensuring that it is of equal thickness (approximately half a centimeter), over the entire surface. Let the dough rest in the fridge for a minimum of 30 minutes. so that it takes shape and it is easier to cut it without deforming it.
After this time, we take the dough out of the fridge and cut with a pasta cutter. Place the cookies on a baking tray covered with parchment paper and refrigerate another 30 minutes. Bake at 180ºC, with heat up and down, for 10-12 minutes or until they begin to brown slightly on the ends.
Once ready, we remove the tray from the oven and transfer the cookies to a metal rack where we have to let cool before eating or decorating. They last perfectly for days if we keep them in a metal can.
