This apple and raisin cake is a most delicious dessert. Filled with bits of apples and comforting spices, it’s a great bite to enjoy with afternoon coffee or for breakfast. Is about a nice soft and moist cake that has a great texture. Although the best thing is that it is easy to prepare. Optionally, you can add extra ground ginger and vanilla essence to enrich it with more flavors.
The first step is turn on the oven at 180ºC. Then, in a bowl, we dissolve the sugar together with the oil with the help of a whisk to dissolve the crystals. Then add the milk, the lemon zest (optional) and stir.
At this time, we add the dry ingredients: the flour together with the baking soda, the ground cinnamon and the pinch of salt until there are no lumps and a smooth dough is obtained.
We take the apple and peel it with the help of a small knife. Remove the heart of the fruit and cut into slices approximately 1 cm thick.
For the next step, pass the raisins through flour and we shake them so that there are no excesses. This will prevent the fruits from sinking into the cake. Add both ingredients to the interior mixture.
Pour the mixture into a silicone mold without reaching the surface. In the case of using a steel mold, we paint the entire surface with oil. Optionally, we accommodate the whole nuts on the surface.
we bake for 30 minutes at 180ºC or until, when pierced with a toothpick, it comes out dry. The cake is served as is but, for a sweeter finish, it can be finished with a simple sugar glaze, some flaked almonds or whole walnuts if you fancy a touch of crunch.
