We will open the chicken through the center of the breast with kitchen scissors. We will flatten it a bit to give it a flat shape -it will be more comfortable when we put it on the grill-. To make the marinade (or marinade), we must mix all the ingredients in a bowl, beating it with a fork, until we get a kind of paste. We spread the chicken with that paste on both sides abundantly.

We will start with the grill elevated and letting the chicken begin to roast on the skin side, turning the chicken every 15 minutes. As it roasts and the embers lose strength, we lower the height of the grill. We will finish when the chicken is well browned on both sides and the interior is cooked.
