We pour 500 ml of cold water into the glass, until it is full and we place two eggs in the basket to cook and inside the glass. Cook for 14 minutes at speed 1/120 °C. Once cooked, empty the basket, rinse with water and dry well.
We put the Serrano ham in the glass with the measuring cup on and chop Turbo for 3 seconds and remove to a plate. If we want the pieces to be more noticeable or we already have everything chopped that we like, we will save this step.
It is time for the onion, which we will chop with the Turbo for 7 seconds. Once chopped, add the olive oil and butter and fry it using the sauté key for 3 minutes at 120 °C.
Add the flour, which we sauté for 3 minutes at speed 2 and 120 °C, and immediately afterwards, add the milk. It is important that it is not cold, so that lumps do not form. we also add the nutmeg, pepper and salt, mixing everything for 10 seconds at speed 6. Once mixed, add the ham and cook the béchamel sauce for 7 minutes at speed 3 and at 120 °C. Let the dough rest for 5 minutes and meanwhile, peel and chop the boiled eggs, which we will add later.
Pour the dough into a bowl or tray and cover with the skin (we place the plastic wrap attached to the dough so that it does not dry out), leaving chill in the fridge until the next day.

The most tedious part arrives but luckily we have at our disposal all the tricks in the world to make our task easier, for example using these kitchen tongs to shape them.
