This special menu for the Mexico-Tokyo route was designed by chef Miriam Moriyama and his team to celebrate the authenticity of Japanese cuisine on flights to that destination. It includes dishes such as Tako Sakura (octopus cooked in soy and mirin), Gindara miso tsuke yaki (sea bass marinated in sweet miso) and Gohan (Japanese steamed rice).
Currently the menu is only available for the Premier cabin of the route that is operated by the Boeing 787-8 Dreamlinerwhich implies a lower environmental impact by requiring less fuel use and emits less noise to reduce noise pollution.
