From the inventors of cloud bread (the fast, low-carb, high-protein alternative to ordinary cereal bread), the same base used as fake pizza now comes to TikTok. It is very popular on social networks and, depending on the ingredients we add, it can be suitable for keto or weight loss diets. Although it is satiating, it is not very heavy, unless we go overboard with the cheese.
To get started, preheat the oven to 180ºC without air and prepare a tray with non-stick baking paper. We put the egg whites in a deep container and add a pinch of salt, pepper, garlic powder, oregano and other spices (if we want), to taste.
Beat with a wire mixer until soft peaks form. Then we incorporate the cornstarch (if we want to add it) and beat a little more (one or two minutes) until we have the texture of a soft meringue.
Pour onto the prepared tray and spread with a spatula or the back of a spoon, giving it a round or oval shape and neither too thin nor too thick. Although it will deflate when it comes out of the oven.
Bake until golden brown for about 12-15 minutes, and remove from the oven. We spread the ingredients of the coverage to taste (tomato sauce, vegetables, cooked ham or chopped bacon, mushrooms…) and plenty of cheese to gratin. Bake again for 5-7 minutes, until the cheese is melted, and add a little more oregano before serving immediately.
The easiest thing is to use pasteurized egg whites from a jar to avoid having to separate the eggs from the yolks, and it allows us to adjust the recipe to our liking as we get used to it. The Directo al Palate experts have added a little cornstarch or cornstarch to this version to help give it cohesion and elasticity, although it can be done without it. Instead we can add a couple of tablespoons of cream cheese spreadas in the cloud bread recipe.
