Whether it’s hot or if what we want is to enjoy a delicate, fresh and healthy recipe, this cold pasta salad with yogurt sauce It’s just what we need. Imagine having it at a meal along with this homemade lemonade. A win win.
According to the experts at Directo al Paladar, “short pasta enhances freshness since, being hollow, the yogurt and aromatics are introduced from the sides and are very tasty”, but we can use our favorite pasta for this recipe.
In the same way we can use our favorite aromatic herbs, from basil to dill through mint, our favorite for giving it an extra freshness. If you don’t have fresh herbs available (the solution may be these mini-gardens that you can put in your kitchen), try dried ones, although the result is much less attractive and aromatic.
On the other hand, broccoli and peas provide those vegetables that are so necessary (remember that we must take five portions of fruit and vegetables a day), but we can change them for others such as cucumber or zucchini.
The first thing we will do is the sauce by mixing the yogurt, the grated lemon peel without the white part (with a microplane the task is very simple), the olive oil, salt and pepper in a bowl. Mix and add the chopped herbs. Once everything is mixed keep in the fridge while we prepare the rest. The sauce recipe is a little different from the one in the video that we have shown you on other occasions, but it has an extra aroma thanks to the zest and herbs.

Cook the pasta al dente, drain and stop cooking with a little cold water. We can cook the vegetables with the pasta water (at the same time), but to better preserve all the nutrients, the best way to cook it is to steam it, according to our nutrition experts at Vitónica. Don’t worry, we can use a steam case like this one from Lekué that makes the task easier and is used in the microwave.
