There are days when the hectic stress of work accompanies us home and takes its toll on our inspiration when it comes to cooking. Knowing that it is difficult to vary in terms of recipes, opting each day for originality and deliciousness, today we show you an easy and quick dinner recipe -as well as tasty-, where leftovers from the bottom of our fridge take a leading role and make the dish can be tuned to our liking.
Preparing it on the go, we will take advantage of everything we have in the fridge to create a unique and delicious dish. With these premises, one of the favorite dinners for the editors of Directo al palado are the frittatas, a nutritious and satisfying dish that are super easy and quick to make and that can be cooked only on the stove or finished in the oven. Adapting to the tastes of each one, the recipe for Mediterranean frittata with ricotta and pesto is perfect as a base, admitting endless variations depending on what we feel like or the ingredients we have in the fridge.
It is a kind of tortilla in the Italian version that has a little quinoa to make it more nutritious and satisfying. However, we can take advantage of the leftovers of it, or of another grain that we have left behind in the fridge already cooked, such as rice, couscous, millet, etc. Although if we prefer, demo does not add anything.
The vegetable is elemental in this dish, as can be the tomatoes. Whether they are Cherry or quality tomatoes, we can also use a dry version or change it for another vegetable such as zucchini, eggplant or roasted peppers. The icing on the cake comes from the pesto sauce and ricotta cheese, although we can always replace them with tomato sauce, cottage cheese, or whatever we feel like most.
Seasoning the recipe with fresh basil, parsley, thyme, oregano or the spice that we like the most, this dinner will be an explosion of flavors for our palate while we clean our fridge.
