At the Aké farm, at the foot of the archaeological zone of the same name, 200 guests enjoyed a night that, in reality, was the culmination of a project that goes much further. “The objective of Hokol Vuh goes beyond a dinner, it is to be together, visit the people of the communities and remember our humanity. In the end, what we want is for the chefs who come to cook to become ambassadors of Yucatan,” chef Roberto Solís assured during the press conference prior to the event.
From October 17, the participating chefs – from Mexico and countries such as Scotland, Chile, Italy, Holland, Japan and the United States, among others – touring Mayan communities to delve into their culture, discover their ingredients, learn from their techniques of traditional cuisine and put together a menu that surprised locals and visitors. In the chef line-up, names such as the Peruvian Virgilio Martínez, the French Dominique Crenn, the Chilean Rodolfo Guzmán, the Dutch Sergio Herman, the Portuguese José Avillez and the American Junghyun Park, among others, stood out.
