In summer what we most want is to spend time on the beach and the pool and not between stoves. That is why finding light and refreshing recipes with which to escape the heat (like those of these salads) is our must have<\/em> And the best thing is that the one we bring today is not only great in summer: it is one of those recipes that you will take advantage of all year long.<\/p>\n

In Italy they use it as a reuse recipe, because it uses crumb bread from the day before and vegetable broth, in addition to two classics in Italian gastronomy: tomatoes and basil<\/strong>.<\/p>\n

Although it is cooked hot, not like the traditional salmorejo to which it reminds us so much, it is served cold or lukewarm as it would be done with a Vichyssoise<\/em>and in clay bowls like these if we continue the most traditional pappa al pomodoro recipe<\/strong>.<\/p>\n

The first thing we will do is cut the bread into pieces (they do not have to be the same, we can do it gross<\/em> way) and, in a bowl, moisten it with the vegetable broth that we will incorporate while boiling.<\/p>\n<\/p><\/div>\n<\/p><\/div>\n<\/p><\/div>\n<\/div>\n

Although we can use ready-made broth, at Directo al Paladar they have a very easy recipe for vegetable broth that we can keep in the freezer at home and use whenever we want. <\/p>\n

While the bread softens with the broth, peel and chop the tomatoes<\/strong> (at DAP they explain how to peel them easily to make the most of the meat). In a clay pot, or in a pot if we don’t have a pot, heat the oil and confit the garlic for a couple of minutes.<\/p>\n
