The Aztecs discovered chocolate to give all mankind a wonder. The origin of cocoa dates back more than 4,000 years, when the first trees appeared in the tropical forests of the Amazon and Orinoco basins. Centuries later that cocoa was transformed into the chocolate we now love.
It is an ounce of chocolate that we eat after dinner when we have a sweet tooth, but we can go one step further and make one of the most popular chocolate desserts: the chocolate mousse.
In addition to this version with avocado (very creamy), or this spicy chocolate mousse, there is a very easy recipe for chocolate mousse without eggs, ideal for when we feel like sweet and for which we only need three ingredients and 10 minutes.
The first thing we will do is exactly what makes this mousse so special: a ganache with the chocolate and the marshmallow. Put the clouds with the chopped chocolate in a deep bowl for the microwave and heat for two minutes at maximum power. At that time, the chocolate will have melted along with the clouds, so we mix until we have a homogeneous cream. If there are any pieces of chocolate left, we can put them back in the microwave in 10-second intervals until the cream is smooth and lump-free.
Right now it is important to let the cream temper out of the fridge for at least 45 minutes, until it loses heat and when mixed with the whipped cream, it does not go down. To whip the cream, two tricks: make it very cold (it is also recommended that the bowl be cold) and beat just until it has hard peaks, preventing it from curdling and turning into butter. We can use a rod mixer like this one to control at all times how the cream is going.

When it is assembled and the chocolate and marshmallow cream is tempered, we mix both with enveloping movements and very slowly, to prevent it from losing sponginess. We put in small glass bowls, cover and reserve in the fridge until serving time, when we will decorate it with a little Greek yogurt and some chocolate chips.
