To get down to work with this dish, first of all we will remove the first leaves of the artichokes and the tips. Immediately afterwards, we will divide them into two halves. From there we are going to boil them in salted water for 15 minutes. Once they have been cooked, we will drain them and we will distribute them in a tray (or source) to bake. In each of the halves we will put a quail egg.
Season to taste and add a drizzle of extra virgin olive oil. Once we reach this step, we will bake for ten minutes at 180ºC -with the oven already preheated-. Here we must monitor the cooking point of the white, as it will notify us when this dish is ready.
Remove the artichokes from the oven and sprinkle them with a little grated Parmesan cheese (melting slightly with the remaining heat). If you are one of those who like it very toasted, you can grill it for one minute at 230ºC. To finish, we will decorate the plate with some parsley sprouts and serve immediately to surprise our diners.
