Potatoes and eggs are an ideal wild card for our day to day. Together they form the perfect dish (the potato omelette will always be the love of our life), and separately they are so versatile that they can be the center of our dishes in a thousand ways.
Potatoes, for example, are the perfect side dish. We are not only talking about the classic mashed potatoes, the French fries (at DAP they give us a couple of tricks so that they always turn out well) or the lesser known but equally delicious potatoes of importance.
There are so many recipes for side dishes with potatoes as there are protagonists that making a list of the recipes would give us hundreds. Today we propose some original hash browns, a kind of potato cakes that will become your star garnish.
They have English origin, and both North Americans and English serve them at any time, either with breakfast (if the English breakfast is too much for you, we give you some ideas for light and healthy breakfasts) or to accompany a hamburger.
Do not think that you are going to find a complicated recipe, on the contrary, it is tremendously simple. We will begin peeling the potatoes and grating them with a coarse grater. In El Corte Inglés they have a particularly practical one that has a box with which we will stain much less and that costs 5.95 euros. We could do it with a kitchen robot but it is not essential, since with the grater it is great.

Once the potato is grated, it must be drained. It is best to do it with a mesh or cloth strainer, the typical ones used to make oat milk at home, but we can use a clean kitchen cloth. Put the potatoes inside and press hard until we lose as much water as we canas we would do like cucumber when making tzatziki.

It’s time to Mix all ingredients in a bowl: the drained potato, the egg, the flour and a little salt. We stir well until we get a homogeneous mixture and we are throwing spoonfuls of dough in a non-stick frying pan in which we will have thrown a little olive oil.
Already in the pan, we flatten each portion of dough with a spoon, as if they were small pancakes. Fry on both sides until golden and we serve hot. Along with good bread (you can check out the best artisan bakeries in Madrid here), it will be the ideal complement to any dish, from roast chicken to Galician-style hake. Bon appetite!
If you want another idea of original potatoes for your side dishestry to make these hasselback potatoes, because they are easier than it seems and they only need a little patience as the video shows:
