The pantesca potato salad is very similar to the classic country salad, only this one is vegan and has a slightly more powerful touch of capers. The best thing is that just like what happens with this octopus salad, pantesca potato salad is perfect to take to the beach or to the pool, or as a dinner that we can have prepared in advance.
The first thing we will do is cook the potato, whole, washed and with skin, in a covered pot. It is important that they are well covered with water and cook them about 25 minutes until they are tender inside (if we prick with a knife and it comes out and goes in without difficulty, they are ready). Once cooked, drain and reserve to cool down.
While we prepare the rest of the ingredients, starting with the tomatoes and the basil that we wash, dry and cut, cut the tomatoes in half or in quarters and the basil by hand to give it a more rustic finish. Cut the onion julienne, and when finished, drain the olives and capers.
It’s time to peel the potatoes (as long as they don’t burn anymore), and cut them into not very small pieces, like a bite. We place the potato still warm in a tray and season with salt and pepper, also adding a dash of oil. In this way we enhance the flavor of the potatoes when they cool down.
Once cold, mix with the rest of the ingredients and add a little more oil, vinegar, oregano, salt and pepper to taste. Remove and store in the fridge in a covered glass container for at least two hours.
