First, we wash and dry the potatoes. Then peel and place in a large pot or casserole. Cover with cold water adding a little salt and put on the stove, preferably with a lid to save energy and time. Bring to a boil, making sure that it does not boil in spurts and cook until they can be pierced with a sharp knife.
The time will depend on the size and type of the potatoes, as well as the power of the fire. However, it will be about 25-30 minutes. Yes indeed, they should not be too soft although we want to be able to crush them without too much effort.
Drain the water and put them in a bowl or leave them in the pot itself, whose residual heat can help us with the seasoning. After we begin to mash with a fork (it may be easier if we break them with the ends first), and add a pinch of fine salt and a good jet of oil.

We will add a splash of oil and/or lemon just before tasting and, optionally, freshly ground pepper. As originally a humble dish, it used to be eaten only for dinner, but today it is recommended to serve it as a side dish.
