Greek cuisine is much more than the aromas of stuffed vine leaves and mousaka. Actually, the quintessential Greek national dish is a very easy recipe: fassolada, or bean soup. Not surprisingly, as lentils, chickpeas and other legumes are easy to grow in the country’s arid, rainfed lands. The secret of this simple dish is to use good quality ingredients, above all, a good virgin olive oil, which significantly flavors the stew. It is served piping hot and is a light and very complete bite, ideal as a starter or as a single dish for dinner.
First of all, Soak the beans in cold water overnight. The next day, we drain them and put them in a pot with plenty of water. Heat and let cook for 35-40 minutes. Drain and return to the pot.
Add the chopped onion, sliced carrots and chopped celery. Crush the tomatoes and add them to the stew. Cover with water and add the olive oil. We season and let simmer for an hour.
As an alternative, we can add some aromatic Mediterranean herbs: a touch of thyme, marjoram and oregano. But this it’s up to you.
