If you have been to Turkey or are a fan of the country’s gastronomy, surely you know its fast food reference, the pide or turkish pizza. This can come in the form of Focaccia (ask for ekmeği) as an accompaniment to food; or in the form of pizza (içli asks), a filler request, which is what we are going to learn how to do in this article.
We start by making the filling. of this ask recipe. To do this, chop onion, tomato and mix with the minced meat in a pan, frying until the meat is done. Then add the chilli pepper, the tomato concentrate and season to taste. Saute everything and let cool.
How to make the Pide dough
For the dough we mix water at 35ºC with yeast and sugar. When a homogeneous mixture is formed, let it rest for 15 minutes. Next put the dough in an oven container with fire and yogurt. Remove, sift with wheat flour and add salt and oil. Knead until you have a homogeneous ball and let it rest for 20 minutes. Then we knead it, cover it and let it rise until it doubles its size.
How to Assemble and Bake Turkish Pide
Finally, it’s time to assemble and bake. Divide the dough into four portions, knead them and cover with the filling and mozzarella. Fold the ends inwards as in the image, brushing the dough with beaten egg. All this goes to the oven, preheated to 250ºC, for about 15 minutes.
