The first thing we have to do is wash and dry the aubergines well, bell pepper and fresh herbs. Then we chop the onion, the garlic cloves very finely and crush the cilantro grains in a mortar, leaving more whole pieces. We also cut the pepper and the aubergines into cubes.
On the other hand, heat two tablespoons of oil in a frying pan, fry the onion with a pinch of salt for about 5-8 minutes and add the pepper and garlic for 10 more minutes. Then add the cilantro and stir for a couple of minutes.
Later we add the aubergine and stir it over low heat so that it begins to take on color. Add the crushed tomato, concentrated tomato and a little water or broth. Stir and cook slowly for about 60-70 minutes.
As it cooks, you have to stir from time to time and add broth as required. The result is a syrupy consistency to which you add a handful of chopped parsley or cilantro and ready to enjoy. If desired, it can be served with fresh dill.
