We start by soaking the breadcrumb pieces in the cold water for a few minutes, until well soaked. We reserve it. We weigh the oil in a jar and reserve it too.
If we make the ajoblanco with Thermomix or another similar robot, we put the crumbs soaked with the water included in the glass, the raw almonds, the garlic clove, the vinegar and the salt and crush 1 min/speed 8. At speed 4 we are adding the oil through the lid little by little with the beaker in place, as if it were a mayonnaise. Then we increase speed 5 about 10 seconds.
If we do not use the Thermomix to make the ajoblanco, we put the soaked crumb with the included water, the raw almond, the garlic clove, vinegar and salt in the blender glass and blend until very fine. With the mixer running, we add the oil little by little, as if it were a mayonnaise, emulsifying well.
