Juicy and very easy to make, this is the recipe for roast pork accompanied by roast potatoes. A winning dish for any day of the year. It can be accompanied with a bit of apple, with a mustard sauce, with some French fries or even a marinade in the pork tenderloin itself, making it the perfect recipe. Although it is always tender, we can also prepare the sirloin so that it is a tad juicier still. Similarly, we can prepare this pork tenderloin in the oven as a stuffed pork, packing it a bit with a few slices of bacon or bacon or directly adding some bacon tacos to the meat itself.
Firstly, peel the potatoes and cut them into slices. half a centimeter thick. Then, we grease the base of the oven container with olive oil and make a bed with the sliced potatoes. We put a small glass of white wine, a small glass of water, the thyme and season with salt and pepper.
We cover the container with albal paper and put it 40 minutes in the oven at 170ºC. Meanwhile, season the sirloin with salt and pepper and sear it in a frying pan over high heat on all sides. Then, carefully open the albal paper and add the sirloin.
Cook uncovered for 15 more minutes at 220ºC and remove from the oven. we’ll leave it rest covered for five minutes before serving.
